Ingredients:

  1. 3 egg yolks
  2. 1/2 cup of lemon juice
  3. 1/2 stick of butter (chopped in pieces)
  4. 1 tsp maple syrup

Whisk egg yolk and lemon juice in a metal bowl.  Continue to whisk over a double boiler for 5 minutes or until it thickens.  Transfer to ice bath and continue to whisk until chilled.  Add 1 tsp maple syrup.
